Party Foods Star Muffins



Star Muffins
Recipe (Source : Delicious Asian Baked Treats)

Butter                      80g
Cake Flour              120g
Salt                          1/2tsp
Baking powder      1tsp
Canned Lychee      130g
Egg                          1
Sugar                      90g
Vanilla Essence      1tsp
Lychee Juice          4tbsp


1)Melt butter set aside.

2) Sift flour,salt and baking powder. Mix well.

3) Cut lychee into small piece.
     Add 3/4 of the lychee to flour mixture and toss lightly to coat.

4) Beat egg and sugar in a mixer at medium high speed for 3 mintues.

5) Add essence , juice and melted butter and mix well.

6) Fold in flour mixture with a spatula.

7) Set mixture aside for 30 mins.

8) Preheat oven to 170C. 
     Line muffin tray with paper cases or aluminium foil cupcake moulds.

9) Fill the paper cases or moulds with mixture,
     sprinkle the remaining lychee on top.

10) Bake for 25 minutes till golden brown
